The Gorgeous and Distinctive White Wines of The Cliff – Part 2

Thursday food puts the spotlight on white wines for the finale of our two-part series on the most distinctive bottles at The Cliff Hotel in Negril’s West End.

For Rimple Nayyar, certified sommelier and wine consultant at The Cliff Hotel, wine pairing doesn’t have to be pompous and serious. Drinking wine should be enjoyable, and food-menu pairings should uplift, delight and inspire. And wine pairings for spicy dishes, like the one served at the hotel’s famed Zest restaurant, need to be thoughtful and include a bit of alchemy.

According Oenological Club Magazine, “There are four considerations for the wine you plan to pair with spicy cuisine: sweetness, acidity, bubbles and aromas.” The sweetness dilutes the spiciness and allows the palate to respond playfully and not feel burned. Acidity and bubbles promote salivation, allowing the palate to reset. And the aromatics create a delicious concerto when they meet the herbaceous nature of Caribbean cuisine.

When we think of whites that pair perfectly with spicy dishes, we immediately think of Riesling, Prosecco and Albariño. But Nayyar encourages people visiting The Cliff to explore the intricacies of their palate and try other whites they wouldn’t typically think to associate with the hotel’s zesty cuisine.

The four whites Nayyar and Thursday Food have chosen to highlight are Château St Jean Chardonnay (Sonoma), Sauvion Les Fondettes Sancerre (Loire Valley), Bolla Delle Venezie Pinot Grigio (Italy) and Villa Maria Sauvignon Blanc (New Zealand). ).
